Tail end of British Food fortnight
It’s Friday and the last day of British Food fortnight. I think that I might have omitted a Great British favourite and need to make up for that now. I completely missed this off the list. Where would we be without Chicken Tikka Marsala? I cannot make this from scratch but with so many excellent sauces available in the supermarket I don’t really need to be able to. But according to the men in the office, all of whom are keen cooks, this is one of those dishes that they will make from basic ingredients, no cheating for them! This is rumoured to be a dish made up in this country and not a native of India at all. It is very flavourful and not too hot. I am, however, a bit of a coward when it comes to hot curries though it does seem to be almost a competitive sport amongst my colleagues.
Food from the north of India tends to be milder than that of the south of India which produces hotter recipes. I may go for a mild little Korma or Butter Chicken but the rest of the office are a little more adventurous and if offered a Tindaloo or Phaal will jump at the chance.
